Apart from getting screws, bolts and nuts etc replated, is there a solution that you can use to clean zinc plated fasteners to bring back their natural shine and finish?

Anything harsher than toothpaste and a good brush, will basically remove plating to the point where rust will start. If your stuff is in good shape but just a little dull - then try a $10 disposable electric toothbrush and "whitening" toothpaste such as Arm&Hammer.

The zinc plating is actually a sacrificial coating. It corrodes, but slowly. If it's looking crappy, then it's probably mostly gone anyway.

remove the hardware from the bike and then soak them in evaporust

+1. Or new oil soaked non stainless for half of the cost of stainless and let it rust out in 3 or 4 years, or a few months if you ride in the salt and snow like I do.
